My 3.1 holy spec:

Pretty standard 14/57 holy spec for 3.1. The points in Imp/Emp Renew pair nicely with the glyph. Although OO5SR casting got nerfed since last patch, SoL has proved very useful with my gear (38% crit) since PoM, Renew and CoH crits proc it. In AoE fights, I typically see 30% of my healing done by Flash Heals, all of which are SoL procs. With a high crit % (30% or higher), HC really shines. Serendipity I find also very useful; I get a 3 stack from SoL procs, then have a hasted GH or PoH when I need it. Depending on playstyle, you may want to put the points from SoL in to Holy Reach or Healing Prayers.
With the spirit nerf, spirit has become less of a priority in terms of stats. Crit, int, spirit and spell power are all solid stats. I would consider crit the main stat, given that is increases HPS, but also improves staying power through HC and SoL procs. Int and spirit are useful for when mana regen are an issue. Remember that int is incredibly useful in 25 man raids, since mana regen buffs like Replenishment and Innervate return a % of mana. So, more int means more mana returned. Spirit goes nicely with crit of course, and also buffs spell power through Spiritual Guidance. Spell power is always a solid stat, although I would never gem for max spell power.
Stay away from MP5 as a holy priest. Any caster gear without spirit should go to dps.
Would also be nice to see this build paired with the new GS glyph, so I can have the tank GS'd for 20 second every minute. With a pally's BoSac, a disc priest's PS and some basic tank CD's, this would make tank healing a bit easier.
